Bone in was maybe cooked wrong

This may very well be the best steak i have ever had — love wagyu but some times the texture is almost too “wet” or fatty — this is perfect— right amount of firmness to the bite and the flavor is out of this world. My #1. And i live in the shadow of snake river farms wagyu.
Ordered both of the above recently for the second time. The strip steak was almost up to the quality of the first order. The rib eye which was 20oz this time instead of the 16oz last time was a significant downgrade from that first excellent steak being not nearly as tender or flavorful. Maybe the difference in weight was the reason but this steak was a disappointment. Also ordered the hot Italian sausage with this order. Still the best Italian sausage ever.
